Once upon a time, in the year ’56.
In this white city, where the best French bread has been born time and again...
Seventy years ago, amid white roads, a time machine took shape—many say it is the monument’s older sibling.
That machine was intended to become the largest and most modern bakery in the mexican Southeast, with European machinery and an enormous production capacity that could feed an entire nation.
A project ahead of its time—people even mocked those who dared to make it work. Among those crazies were my parents and my beloved Aunt Uxa, who devoted their lives to pulling that machine along, even when it seemed it would never start; and yet today it feeds more than 75 families and an entire community.
And that is how this story begins…
I am Luna Patrón Le Doux. I was born in Mérida 33 years ago, and I had the great fortune to grow up in a family of artists who love the sea, heirs to this living entity called Panificadora Montejo.
Hearing so many customers and collaborators connect memories of the past to the flavor of our breads made me understand that what we really sell are family memories filled with nostalgia, flavored with the taste of freshly baked bread.
Our master bakers, their artisanal processes, and our local ingredients make it possible to preserve that truly authentic flavor—one that tastes like a little piece of this city and its tradition.
We make more than 200 different types of bread. Our signature products include French bread loaves, conchas, cuernos, hojaldras, and an assortment of polvorones, among others.
We also offer cakes and fine pastries.
What an honor it is to be the third generation to carry on this institution of fresh daily bread, which today is part of everyday life—not only for Yucatecan families, but also for the foreign families who now live in Mérida.
This year, Pan Montejo celebrated its 70th anniversary, and today it has seven locations and 75 employees.
Our goal is to preserve the flavor of tradition while serving as a cultural reference point for everyone who visits or lives in our beautiful city.
